Ingredients (4 people)

  • 500 – 600g medium shrimp (peeled, tail-on)
  • 1 can of tomato sauce
  • 2 fresh tomatoes (finely chopped)
  • 1 onion (finely chopped)
  • 1-2 garlic cloves (grated)
  • 1 pepper cubed or sliced (optional)
  • 1 ouzo shot (approximately 80 ml)
  • 150g feta cheese (coarsely grated)
  • 1 bunch of parsley (finely chopped)
  • salt, freshly ground pepper
  • olive oil

In a frying pan heat some olive oil and sauté the shrimp for a few minutes, until golden brown on both sides. Remove the shrimp from the frying pan and set aside on a plate lined with kitchen roll. Place the frying pan on the heat again and sauté the pepper (if you choose to add it), the onion and the garlic. Pour some ouzo and wait for a few minutes until it evaporates. Add the tomato sauce and the fresh tomatoes in the frying pan. Simmer for 2-3 minutes and add the shrimp. Simmer for another 2-3 minutes and remove from frying pan. Transfer in a clay pot, sprinkle with some feta cheese and bake in a preheated oven until the cheese melts. Garnish with finely chopped parsley and serve.
